Dillon Gee was a star pitcher in high school and at the University of Texas. While in high school, he had two no-hitters. In 2007, he was drafted by the New York Mets and he played in their minor league system through most of 2010, pitching in five games with the Mets that year. He ended his minor league career with a 28-19 win-loss record and a 3.78 ERA.

In 2011, Gee pitched 160.2 innings in 30 games with the Mets. He finished with a 13-6 record and a 4.43 ERA. The following season, he had shoulder surgery that ended the season for him after 17 games. In 2013, he had a 3.62 ERA and 12-11 record in 32 games. He finished the 2014 season with a 7-8 record, 94 strikeouts to 43 walks, and a 4.00 ERA in 137.1 innings in 22 games.

Gee spent time on the DL with a groin strain in 2015. After struggling with the Mets in June, he was designated for assignment on June 15th. He pitched 39.2 innings in 8 games and he had a 5.90 ERA with no wins and 3 losses. He also pitched 105.0 innings in 17 games in the minors.

Gee signed a minor league contract with the Kansas City Royals on December 18, 2015. He pitched in 14 games from the Royals' starting rotation and 19 games as a reliever in 2016. He finished the season with an 8-9 win-loss record, 89 strikeouts to 37 walks, and a 4.68 ERA in 125.0 innings.

Gee became a free agent on November 8, 2016. He signed a minor league contract with the Texas Rangers on January 17, 2017. He was designated for assignment on June 16th and he elected free agency on June 18th. He signed a minor league contract with the Minnesota Twins on June 22nd. He finished the 2017 season with a 3.47 ERA, 3 wins and 2 losses, and 41 strikeouts to 15 walks in 4 games with the Rangers and 14 games with the Twins.

Gee elected free agency on November 2, 2017. He didn't play professional baseball in 2018. He retired as a major league player on January 29, 2019.
