Eric Fryer was first drafted by the Milwaukee Brewers in 2007. After two seasons in the Brewers' minor league system, he was traded to the New York Yankees in February, 2009. He didn't stay long with the Yankees, however. On June 30, 2009, they traded him to the Pittsburgh Pirates. He continued to play in the minors, joining the Pirates for just 10 games in 2011 and 6 games in 2012.

Fryer signed with the Minnesota Twins in November, 2012. He spent most of the 2013 and 2014 seasons in the minors, playing in just 6 games with the Twins in 2013 and 28 games in 2014.

As a minor league player from 2007 through most of 2014, Fryer had 506 hits, 105 doubles, 247 RBIs, and 399 strikeouts to 242 walks in 580 games. Defensively, he caught 350 games and he made 201 assists, 2,411 putouts, and 37 errors. He caught players trying to steal 29% of the time.

Fryer played in just 15 games with the Twins in 2015.

On November 12, 2015, he signed a minor league contract with the St. Louis Cardinals. He was claimed off waivers by the Pirates on July 3, 2016. He finished the 2016 season with a .267 batting average in 24 games with the Cardinals and 36 games with the Pirates. Defensively, as a catcher in 54 games, he made 19 assists, 274 putouts, and 3 errors. He had a .990 fielding percentage and he caught players trying to steal 25% of the time.

Fryer became a free agent on December 2, 2016. He returned to the Cardinals on a minor league contract on December 12, 2016.

The Cardinals designated Fryer for assignment on July 21, 2017, after playing in just 34 games with them. He elected free agency on July 25th.

Fryer signed a minor league contract with the Philadelphia Phillies on January 3, 2018. He announced his retirement on February 14, 2018.
